The majestic Sierra Nevada is not only a natural treasure of Spain, but also the perfect environment for curing hams. Its unique climatic characteristics with cold winters, dry summers and constant natural ventilation create the ideal conditions for a completely natural curing process, where the fresh mountain air allows the hams to develop their curing process in a slow and balanced manner.
This mountain ecosystem favours curing without the addition of nitrates and nitrites, ensuring a ham free of chemical additives. In addition, thanks to the natural conditions, we use less salt in the curing process, the end result of which is a ham with reduced salt content, but full of flavour and with an unbeatable texture.

The cellars where we cure our hams are located at high altitudes, in the heart of Trevélez, within the Sierra Nevada National Park. These cellars function as true temples of curing, taking advantage of the microflora of the environment to develop the unique nuances of each piece. The specific microclimate of our cellars, together with the natural bacterial flora that inhabits them, plays an essential role in the maturation of the ham, contributing to its aroma and texture.

Thanks to this industry, together with tourism, more than 20,000 people still care for the villages of the so-called Alpujarra Granadina, and can aspire to live in their territory without having to migrate to Granada or other neighbouring capitals. Trevélez, with its 1,476 metres above sea level, is the highest village in the region, and it is this altitude that has allowed the curing of our hams for more than 200 years, giving the population access to a lifelong profession.

The pure, fresh air derived from this privileged environment on the slopes of the Mulhacén, allows us to cure our hams naturally, without the use of nitrites or additives, thus offering a unique product with multiple health benefits.
